This is a great recipe that spices up ground beef in a fun and healthy way–enjoy!
1 lb grass fed ground beef
1-2 inch piece fresh ginger, peeled and graded
2 scallions, chopped
1 tsp garlic, minced
2 tablespoons non-gmo soy sauce
1/4 cup sesame seeds, lightly toasted
1/2 onion, chopped
Sea salt and pepper to taste.
4-6 clean leafs of lettuce for wrapping (romaine, bibb or iceberg lettuce work well)
In a skillet over medium heat, brown the ground beef with the 1/2 of the onion. Stir in ginger, scallions, garlic and soy sauce. Stir frequently. Season with sea salt and serve warm wrapped in lettuce. I served the wraps with steamed pea pods dressed with sea salt and olive oil as well as sautéed carrots…delish!
