I love jello, but it has to be the good kind with quality ingredients, not the highly processed kind with added sugars, artificial colors and flavors.
Gelatin has a number of health benefits. Eating gelatin regularly supports connective tissue, collagen production, digestive health, hair, skin and nails as well as joints…even more reasons to enjoy it!
1 cup strawberry puree (1/2 lb frozen bag yields 1 cup of puree, if you use frozen strawberries allow 15 minutes to thaw)
1/3 cup lemon juice
2 tablespoons raw honey
7 tablespoons gelatin
Directions: Combine all ingredients except gelatin in a saucepan over medium heat. Heat until warm though, but not hot. Add gelatin and use a whisk to thoroughly combine fruit and gelatin. Pour mix into an 8×8 inch glass baking dish. Cover tightly and freeze for 15-20 minutes on a level surface of the freezer.
Remove pan from freezer and remove gummies. Use a spatula to gently loosen edges and the bottom of the gelatin from the sides of the dish. Gently turn upside down onto a cutting board and let the gelatin fall out. Use a knife to cut into squares or strips. Refrigerate leftovers.
