A Healthier Pumpkin Pie

The Holiday season is just around the corner and you know what that means: lots and lots of SWEETS! This year arm yourself with some healthy alternatives. One of my favorites is homemade pumpkin pie made with natural sweeteners. It is a great way to enjoy the holidays without any of the guilt…or gluten!

Crust:
1-cup pecan meal (pecans finely chopped)

2-tablespoons melted butter

1-tablespoon black strap molasses

Filling:
1-teaspoon ground cinnamon

½ teaspoon ground ginger

½ teaspoon ground nutmeg

½ teaspoon ground cloves

1 ½ cups pumpkin puree

1-cup milk

3 eggs, beaten

¼ cup honey

1 ½ tablespoons molasses

1-teaspoon natural vanilla extract

Preheat oven to 450 degrees. Add seasonings to pumpkin puree. In a large bowl, mix milk and eggs, then stir in pumpkin mixture, honey, molasses and vanilla. Pour filling into crust. Bake for 10 minutes then reduce heat to 350 degrees and bake foe 50 minutes longer.
