Pizza Lovers Rejoice! Wheat Free Pizza is Here!

This week, one of my wheat free/gluten free patients asked me about pizza. Being one of her favorite foods to eat, she didn’t want to give it up. Aside from recommending that patients only eat the toppings off the pizza at social gatherings, I hadn’t thought much about an alternative to it.

So, I set out to find and easy recipe that would be perfect for the health conscious pizza lover. I was pleasantly surprised at how good the flavor was and how much it tasted like a ‘real’ pizza. Aside from being very cheesy, it was very good.

Crust
• 3/4 (approx 6 oz) package of full fat cream cheese, room temperature
• 2 eggs
• 1/4-1/2 tsp garlic powder (to taste)
• 1/4 cup grated parmesan cheese
Topping
• 1/2-1 cup pizza sauce
• 1 1/2 cups shredded mozzarella cheese
• toppings – pepperoni, ham, sausage, mushrooms, peppers

Preheat oven to 350.

Lightly grease 9×13 pan with butter. With a handheld mixer, mix cream cheese, eggs, garlic powder and parmesan cheese until combined. Spread into baking dish. Bake for 12-15 minutes, our until golden brown. Allow crust to cool for 10 minutes.

Spread pizza sauce on crust. Top with cheese and toppings. Sprinkle pizza with garlic powder (optional). Bake 8-10 minutes, until cheese is melted.

*Note: While the crust cooled, I put cut up green peppers drizzled with olive oil in the oven to soften for more of an ‘authentic’ pizza taste.
