Ingredients:
1 lb. ground turkey
2-3 carrots
1 bunch of celery
1 yellow onion
1 leek
1/2 head of cabbage
1 can of tomato sauce
In a dutch oven (or large pot) add 1 tablespoon of butter to the pot on medium heat. Add the chopped onion and ground turkey. While the turkey is browning, chop the carrots, celery and leek. Once the turkey has browned thoroughly, add the celery, carrots and leek as well as the tomato sauce. Add 2-3 cans of water until the vegetables are covered, then add the cabbage.
Bring to a boil and reduce heat to a simmer. Allow soup to simmer for at least an hour before eating.
