Fudge Pumpkin Blondies

For those who love a treat once and a while–here is a healthier version to enjoy this Halloween! They are spook-tacular!

1 cup coconut flour
2 teaspoons ground cinnamon (optional)
½ cup coconut sugar
1/3 cup black strap molasses or honey
½ teaspoon sea salt
2 eggs
1 15oz can pumpkin puree
1 tablespoon vanilla extract
⅓ cup (or more) chocolate chunks

Instructions
mix together the coconut flour, cinnamon, coconut sugar, chocolate chunks and sea salt
in a separate bowl, whisk the egg, pumpkin, molasses and vanilla extract
using a rubber spatula, gently mix dry and wet ingredients to form a batter being careful not to over mix or the batter will get oily and dense
spoon the batter onto a 9-inch pan lined with parchment paper
bake at 350°F until a toothpick inserted into the center comes out clean, approximately 25 minutes
