This recipe is a good adjunct to any dinner but is not gluten or dairy free so it should only be eaten once and a while for those who do not tolerate dairy or gluten well. It is HIGHLY recommend that the corn you use is non-GMO as corn is an almost 90% genetically modified crop and is not recommend for consumption by me or the Institute for Responsible Technology. 10 oz NON GMO Corn (I used frozen corn)
1/2 cup cubed potato
1/2 cup chopped onion
1/3 cup water
1 1/2 cup grass fed or organic full fat milk
2 tablespoons einkorn flour
additional 1/4 cup of grass fed or organic full fat milk
Add corn, potato and onion to a pot with 1/3 cup of water. Bring water to a boil and allow veggies to simmer for 10 minutes. Stir in 1 1/2 cup milk. Stir gently. Mix flour and additional 1/4 of milk. Simmer on low for 10-15 minutes. Add sea salt and pepper to taste.
