Banana Bread Bundt Cake

INGREDIENTS
  • 8 tablespoons butter, softened (or one stick)
  • 1 cup coconut sugar
  • 2 eggs
  • 3 ripe bananas, mashed
  • 1 cup organic sour cream
  • 1 teaspoon vanilla extract
  • 1-1/2 teaspoons baking soda
  • 2 1/4 cups einkorn flour
  1. Preheat oven to 300 degrees
  2. Grease bundt pan with butter.
  3. In a large bowl, mix butter and sugar together. Stir in eggs, mashed bananas, sour cream and vanilla. Mix in baking soda and flour. Stir in chips or nuts if you are adding them. Pour in to prepared pan.
  4. Bake for 56-60 mins or until a toothpick inserted in the center comes out clean. Let cool for 30 mins then turn out on cooling rack.
